Farmers tilling the land, fishermen delivering the bounty of the sea, livestock farmers nurturing life.

The distributors who deliver ingredients, and the specialists from design firms, construction and interior companies, and kitchen equipment suppliers who work hard to establish restaurants.

And the culinary schools that pass on the techniques and spirit of cooking to the next generation.

It is through the passion and pride of these individuals that Japan's rich food culture has been built.

However, these industries currently face significant challenges: severe labour shortages, a lack of successors, and rapid changes in the consumer environment.

How can we pass on our food culture to the next generation?
If things continue as they are, Japan's 'gourmet' traditions may become merely a past memory.

We resolved to overcome this crisis through "connection".
Gochisou Co., Ltd. was born as a bridge to support both culture and industry.

01The Significance of the Certification
System and Overseas Education

The value of Japanese cuisine lies not only in its flavours and techniques, but in its philosophy of revering ingredients, appreciating the seasons, and serving guests.

We will create educational opportunities that accurately and deeply convey this value to young people overseas, utilising the 'Certification System for Japanese Cuisine Cooking Skills Overseas' promoted by the Japanese government (Ministry of Agriculture, Forestry and Fisheries).

At the heart of the programme is instruction from chefs who have undergone years of rigorous training in Japan.

They will meticulously convey not only techniques such as knife skills and dashi preparation, but also the ‘passion' and 'cultural background' embedded within the cuisine, through both instructions and practical demonstrations.

And what emerges through this learning is not merely a 'chef'.
It is a 'culinary ambassador' connecting Japan and the world.

Should students develop further interest, we support their entry into culinary schools in Japan, employment in restaurants or production facilities, and further learning and career development within related industries.

By promoting Japanese cuisine in their home countries, they generate new interest and demand for Japanese produce, kitchen equipment, and culinary schools.

This will become a driving force supporting Japan's primary industries, educational institutions, and the food service sector, offering a breakthrough for challenges such as labour shortages and the decline of regional industries.
